Christmas Whole Chicken

All of our free-range chicken is home grown and are free range chickens. They are slow-grown and are never given antibiotics and live twice the length of their supermarket counterparts. Our chickens are allowed to roam the fields near their homes from dawn till dusk, adding natural goodness to their diets to balance the locally grown and milled cereals they are fed.
 
We prefer to season our roast chicken with salt, pepper, a quartered lemon, lots of garlic, white wine, and chicken stock in the bottom of the roasting pan. If you're looking for something a little different, consider drizzling the chicken with a mixture of hot harissa, garlic, and olive oil that has already been combined in a bowl.
